Since joining his father in 2004, Raphaël Bèrêche has helped convert viticulture practices to include planting cover crops, eliminating herbicides, and implementing biodynamic farming. The Bèrêche wines are largely comprised of equal parts of Pinot Noir, Chardonnay and Pinot Meunier planted in the Montagne de Reims. Vinification in oak has now increased to 75% of production, and malolactic fermentation is regularly blocked. This leads the wines to show a substantial depth of flavor and hints of oxidative notes that marry beautifully with the crisp and lively underlying material. The Brut Reserve bottling is comprised of all three varieties and contains 30% reserve wine. It is a perfect way to become introduced to the style of winemaking and terroirs that reflect the entire portfolio of wines.
