Tasting Notes

Aromas of ripe red fruit, wild strawberry, tart raspberry, brioche, and brown sugar lead the nose. The palate is fresh and mineral, with fine effervescence, expressive berry fruit, and a dry, lifted finish.

Wine Details / Description

Antoine Bouvet took over his family's Mareuil-sur-Aÿ estate at seventeen in 2013, converting straight away to organic and biodynamic-inspired farming with cover crops and no herbicides. The domaine was founded by his grandfather Guy in 1970, and Antoine keeps only about a hectare of the family's fruit for his own label.

The rosé draws on roughly five hectares of Premier Cru vines across Mareuil-sur-Aÿ, Bisseuil, and Avenay-Val-d'Or, on chalk and limestone subsoils under clay, from vines around forty years old. Whole clusters are hand-harvested and fermented with indigenous yeasts in French oak, with the rosé colour and structure coming from a saignée portion of Pinot Noir. Only a few hundred bottles are made per release, finished at 12.5% alcohol.
