Blauschiefer is one of my favorite dry Riesling balancing acts. The name refers to the Mosel's abundant blue slate, and trocken signifies that the wine has been fermented dry, with nine grams per liter of sugar or less (About two grams/liter in this case). Any small amount of sweetness you might taste plays against the high acid.
