A high-altitude Jura Trousseau from Julien Mareschal, grown at around 500 meters on clay-limestone above Pupillin. Fermented mostly whole cluster with very low sulfur, it is savory, peppery, and energetic.

Tasting Notes

Aromas of blueberry, black cherry, cracked pepper, dried flowers, and warm spice lead the nose. The palate is powerful and earthy, with bright acidity, supple tannins, and a savory, mineral finish.

Wine Details / Description

Julien Mareschal founded Domaine de la Borde in Pupillin in 2003 and farms five hectares in the Jura. He converted to organic and biodynamic-inspired practices from 2012, working the soils by hand and keeping the cellar deliberately minimal, with native yeasts and total sulfur held under thirty milligrams per liter against a conventional allowance of 150.

Sous la Roche is one of the domaine's highest parcels, sitting around 500 to 550 meters on clay-limestone of Jurassic origin, including the flaky marl locally known as Schist Carton. The wine is 100% Trousseau, fermented with roughly 75% whole clusters and the remainder destemmed, using only indigenous yeasts. Quantities are very small.
