All wines stored at 55° and 70% humidity
"Vineyard: 50 - 60 degree steep parcel of 0.5 hectares situated 170 to 250 meters above sea level. The vines average 50 years in age. Exposure is south, south-west in Côte Brune. Guyot pruning is employed. Yields are 40hl/ha.
Viticulture: All vineyard work is done by hand. Vineyards are farmed using organic methods without the use of any "phytosanitiares" inputs or any other unnatural by products.
Vinification: The grapes are vinified whole cluster and with native yeasts in concrete tanks. Light punchdowns at the start of the fermentation. During bottling, very light filtering.
Aging: Aged for at least 18 months in a combination used French oak demi-muid and barrique. Aged for at least one year in bottle before release." - Importer Notes
