Tasting Notes

Aromas of red apple, apricot, citrus peel, brioche, almond, and chalk lead the nose. The palate is round yet energetic, with fine bubbles, savory depth, and a dry, persistent finish.

Wine Details / Description

Charles Dufour farms vineyards in Chervey under his mother's name, Domaine Françoise Martinot. The vineyards sit on lower slopes in the Côte des Bar, where marl and limestone soils and a slightly warmer microclimate contribute to vinous, expressive Champagnes.

Bistrotage B.20 is made from Pinot Noir, with the base wine coming from the 2020 vintage. The wine is spontaneously fermented, aged partly in tank and partly in barrel, then given extended aging on lees in bottle before disgorgement as an Extra Brut Champagne.
