Jean-Marc Vincent's most singular and interesting wine is arguably the "Conservatoire" Bourgogne Blanc. Conservatoire comes from a tiny 0.3-hectare vineyard established by the ATVB (Association Technique Viticole de Bourgogne) to preserve Chardonnay's genetic diversity. More than 400 different massale selections are planted here, making it the most complete collection of Chardonnay genetics in the world! Because the vineyard also supplies propagation wood to Burgundy's nurseries, yields are kept exceptionally low, adding another layer of concentration to the fruit.
