Aromas of yellow apple, citrus peel, hazelnut, white flowers, and flinty stone lead the nose. The palate is powerful and pure, with bright acidity, real density, and a long, saline mineral finish.

Wine Details / Description

The Collet family has farmed in Chablis since 1792, and the domaine was formalized by Jean Collet in 1952. Romain Collet now leads winemaking across roughly forty hectares, farming organically since 1999 and fermenting the full range with native yeasts since 2012.

Mont de Milieu is a forty-four hectare climat on the right bank, a south and southeast facing slope sheltered from north winds by the woodland above it. Small white limestone stones sit over Kimmeridgian clay, and the site is known for wines of power and density that reward patience. Collet ages his Premier Crus in French oak with no new wood, keeping the fruit and stone in front.
