Tasting Notes

Aromas of red apple, white peach, brioche, almond, and chalk lead the nose. The palate is vinous and dry, with fine bubbles, Pinot Noir depth, and a long, bone-dry mineral finish.

Wine Details / Description

Antoine Bouvet's grandfather Guy founded the family estate in Mareuil-sur-Aÿ in 1970. Antoine took over at seventeen in 2013 and converted immediately to organic and biodynamic-inspired farming, with cover crops, integrated livestock, and agroforestry plantings. Most of the family's fruit is still sold to Bollinger, and he reserves roughly a hectare for his own label, producing fewer than 5,000 bottles a year.

Les Monts de la Vallée draws on around five hectares of Premier Cru vines across Bisseuil, Mareuil-sur-Aÿ, and Avenay-Val-d'Or, on chalk, limestone, and marl, from massal-selection plantings about forty years old. This bottling is 100% Pinot Noir, hand-harvested and fermented with indigenous yeasts in French oak. The blend is 75% 2023 and 25% 2022, disgorged in March 2026 with zero dosage at 12.5% alcohol, in a few hundred bottles.
