Wine Details / Description

Pascal Janvier came to winemaking at thirty, having trained as a butcher, and over three decades became one of the defining growers of Jasnières. The appellation sits an hour north of Touraine and has fewer than a hundred hectares under vine, making it one of the Loire's smallest and most overlooked.

Cuvée du Silex comes from a six-hectare domaine on clay, flint, and limestone, from Chenin Blanc vines thirty-five to forty years old, farmed by lutte raisonnée. The wine is racked after fermentation and spends a few months in vessel before bottling at a modest 12% alcohol, which keeps the balance of honeyed lushness and mineral cut intact.
