Vin Santo is a lambic using the pomace of Trebbiano grapes coming from Tenuta di Capezzana macerated with 12- and 24-month old lambic.
About Cantillon
When it comes to beer, Cantillon is the holy grail, and for lovers of wine, there is no substitute. Cantillon spontaneously ferments their lambics, also referred to as sour beers, with natural yeasts. Made from about 35% wheat, 65% malted barley, and relatively small amounts of aged hops.
