Camille Savès owns and farms most of their vineyards in the Grand Cru rated village of Bouzy in the Montagne de Reims region. At the helm, Hervé Savès uses only the "cuvée" or first pressing of his grapes, as later pressings are sold off. Relying on 75% Pinot Noir and 25% Chardonnay here, Hervè chooses to block malolactic fermentation to preserve a greater sense of minerality and cut to pair alongside the rich Pinot Noir fruit of Bouzy and Ambonnay.
