In 2002, he bought his first .05 hectare vineyard plot and produced his first bottling that same year. Since then, Jérôme expanded the holdings to five hectares of vines and harvests every year with a group of well-trained friends.\u003c\/p\u003e\n\u003cp\u003eVinification takes place in a small winery at his home with a primary goal of terroir transparency. Viticulture is organic for 70% of the vineyards and sustainable for 30%. No pesticides and all vines are plowed.
