If I've learned one thing about Chassagne-Montrachet, it's that all roads lead to the top of the slope to Premier Cru Caillerets. This 0.34-hectare site is the signature stamp within Sylvain Morey's excellent range of whites.
In 2014, Jean-Marc Morey's vineyards were split between his daughter (Caroline) and son (Sylvain). Since then, Sylvain has slightly diverged from his father's practices. Key changes include leaving the wines untouched in barrel with no bâttonage (stirring of lees) and moving from 12-month élevage to 16 months. This pushed the wines into a more linear style while also picking up more depth.
