2019 Saint Benoit "Gryphées" Arbois Pupillin Trousseau

"From two parcels, both at the heart of the Pupillin vineyards, but located 60 meters apart from one another. Côte de Feule: (10 ares) Moderate slope (26% average incline), south-facing. 390m altitude. Located in what was once a stone quarry, the soils are shallow and rocky, composed of iris-colored Triassic marls. Fonteneille: (15 ares) Located on the plateau above Côte de Feule and planted in a North/South orientation. 400m altitude. Clay and silt soils above a Triassic limestone bedrock with fossilized mollusks (gryphées).
100% whole cluster, ambient yeast fermentation in stainless steel tank with no added SO2, total maceration lasts 12 to 16 days. Pump-overs only, vertical oak pressing. Aged 80% for 9 months in stainless steel and 20% in older barrels (228L). No fining, no filtration. Low SO2 after malo and at bottling." - Importer Note
