Les Mémoires is produced from Germain’s oldest vines (112 years old) on a small 0.8-hectare parcel made of silex scree and Turonian limestone soils. He harvests on the earlier side to preserve his fruit’s freshness and vibrancy while also maintaining a fine line to avoid those green vegetal notes and astringent tannins. The Les Mémoires, particularly, is 100% de-stemmed, with only light pumpovers during fermentation meant to “infuse” the grapes rather than extract them. It’s then aged in a 2,500L foudre for 12 months before bottling.
Everything about this wine pulls you in—from the vivid purple-magenta color to the beautiful aromatics wafting out as you tilt your nose toward the wine glass. The black peppercorn and green bell pepper are there but in a way that’s more herbal than green, and they willfully give way to flavors of inky lavender with an underbelly of red rose florals reminiscent of Pinot Noir. This is Cabernet Franc that will tug at the heartstrings of Burgundy lovers, pleading them to take a detour into the Loire!
