Collet Premier Cru Chablis was my epiphany wine in college. Today, Montmains and Montée de Tonnere are the cuvées that thrill me the most. The former cuvée only sees stainless steel while the latter ages in neutral oak. Give these some air, and let the marvelous texture unfold.
