This barrel select wine is only made in particularly strong vintages. Grapes are hand selected in the vineyard and dried in boxes or on mats (where botrytis often develops in November) until January. Grapes are pressed in January, fermentation takes 45 days, and eventually the wine is racked to barrels where it is aged for seven years.
