"Our 2014 Blanc de Blancs is a méthode Champenoise sparkling wine sourced from Chardonnay grown at Bentrock Vineyard in the Sta. Rita Hills. These Chardonnay grapes from our best single vineyard site were harvested in the 2014 vintage, fermented naturally in neutral barrel, and completed both primary and malolactic fermentation in barrel. After 1 year, we racked the wine and transported it to Michael Cruse's facility in Petaluma, CA for bottling, tirage, and eventually disgorgement.
The wine aged on the lees, in bottle for 40 months before its disgorgement in the winter of 2019. The 2014 Blanc de Blancs is bone dry (Brut) and there was no dosage added (Brut Zèro). In other words, the wine is Dry-Dry, with no hint of sweetness. The wine possesses a rich and generous texture, due to both the oxidized aging of the wine and extended time on the lees.
The label shows microscopic images of ancient, single-cell, marine organisms called Diatoms. Over the course of 25 million years, these decomposing phytoplankton sank to the ocean floor and created the soil in which we now grow Chardonnay in the Sta. Rita Hills."
